EASY PEACH KUCHEN (German Cake)

This is something so delicious and so fast and easy to make that you will be literally addicted to it.

And it has a story! That's why I'm in the picture hehehe!

Las summer I was in the beach for vacations with my family and we got visitors for lunch (my Mom's Mom who I hardly get to see once a year, since she live 12 hours away from where I live). The place I'm showing in the picture is 2 hours away from everything! So we need to be very mindful not to forget the basics for surviving a whole week in the middle of nowhere! So, in this context, we found ourselves with no dessert at all for our guests...but I came up with this wonderful Kuchen-like treat (german cake) and it was a hit! It's easy, gluten and dairy free, healthy and fresh! You are going to love it and your guests will love it, too. Just make sure to describe how easy it was for you to make it and get all the credits for being such an amazing host!


For this recipe you will need

A food processor

A baking dish


Ingredients

1 cup coconut flour

1/2 cup whole oats flour

1/2 cup flax meal

1 tsp baking powders without aluminum

1 tsp cinnamon

1/4 tsp sea salt

1/2 tsp pure stevia

4 eggs

1 1/2 cup of filtered water

1/2 cup olive oil or liquid coconut oil


Fruit 2 peaches cut in slices (thickness to taste)

2 tbsp organic coconut sugar

1/4 cup home-made plum jam (optional)


Instructions

The easiest and fastest way to do this is in a food processor. Just put the put all the ingredients on it and process until you obtain a smooth batter. Next, pour the batter into the baking dish, spread with a spatula to even the surface.

Place the peach slices forming the pattern that you like. This is your mindful eating moment, a moment to connect with your food. Peaches are very aromatic. Fell their texture as you grab every little slice. Enjoy the moment and think of reasons to be grateful for this food that you are preparing.

Once you finish, sprinkle the organic coconut sugar on top.


Bake for 30 minutes at 356°F. Let it cool for at least 1 hour before cutting.

Serve cold or warm.
